Ingredients

  • Bread Flour – 1000 gram
  • Granulated Sugar – 200 gram
  • Instant Dry Yeast – 15 gram
  • Salt – 10 gram
  • Bread Improver – 5 gram
  • Milk Powder – 30 gram
  • Eggs – 100 gram
  • Water – 450 to 470 gram
  • Unsalted Butter – 100 gram

 

Topping

  • Margarine – 41 gram
  • Granulated Sugar – 41 gram
  • Eggs – 66 gram
  • Milk Powder – 66 gram
  • Cake Flour – 100 gram

Instruction

Step 1

Prepare the Dough : Combine flour, sugar, salt, yeast, bread improver, milk powder and eggs. Add butter, then knead until smooth. Let the dough rise until doubled in size.

Step 2

Make the Cookie Dough : Mix butter and sugar until creamy. Add an egg and blend well. Sift in flour and baking powder, and mix to form a dough. Chill in the refrigerator.

Step 3

Shape the Buns : Divide the bread dough into equal portions, shape into balls, and let them rise again. Divide the cookie dough, roll it out, and wrap it around each bread dough ball.

Step 4

Create the Pattern : Score the tops of the buns with a knife to create the classic crisscross pattern.

Step 5

Bake : Place the buns on a baking sheet, let them rest briefly, then bake in a preheated oven until golden.
